The sun sets early now, when there is a sun that is.

It’s been cold, wet and grey here lately. The days have the stamp of winter on it.

Looped scarfs. wet puddles to jump in, bare trees and mornings starting with wailing black cockatoos overhead.

This is our winter. Not a winter with snow, and sub zero temperatures but a Sydney winter non the less. A winter that calls for heartier food. Slow cooked soups, polenta dishes and perhaps the odd pudding or two.

Sticky Date Pudding

125g softened butter

80g brown sugar*

2 beaten eggs

1 tsp cinnamon

zest of an orange

300g self raising flour

220g dates (I used medjool dates)

1 tsp bicarbonate soda

125mls boiling water

Take any seeds out of the dates and split the dates in half. Pop them in a bowl, add the bicarb and boiling water, set aside.

Cream butter and brown sugar together. Add beaten eggs, orange zest, and cinnamon mix well. Then add date mixture and fold through the flour.

I baked these in individual size cake pans for approximately 25 minutes at 180C. You can easily bake it as a whole cake, and adjust cooking time to suit.

* you could add more sugar if you like your whole pudding experience to be on the sweeter side. I think there is enough sweetness in the sauce though.

Sauce

300mls cream

110g dark muscavado sugar

100g butter

Bring cream to a simmer, add sugar and butter. Stir continuously until butter has melted, (and don’t let it boil over!)

Now with all that pudding energy…best go find some puddles to jump in.

apple and oat muffin season

Slack jawed, and with my elbow cast at an odd angle, my eyelids creaked open. It seemed I had fallen asleep. These things happen sometimes. It’s  called the sneaky nap. Not a nap that you sneak in, more a nap that sneaks up on you.

There you are going about your business, and then suddenly… whooshka! You wake up slack jawed and no feeling in your arm. The sneaky nap as struck again.

Bleary eyed I staggered out to the lounge room only to find things were looking a little different. Very different. I couldn’t put my finger on it. The Monkeys were quiet and going about their monkey business, surprisingly not causing havoc at that particular moment. So it wasn’t them.

I continued looking about. Things looked clearer, clearer than they had for quite some time. I didn’t think I had napped for that long, so it can’t have been clarity of thought that had returned. I squinted… then it dawned on me, that was it. The fact that I was squinting. Squinting in my lounge room. Squinting in the afternoon autumnal sunlight. At that same moment Mr Chocolate cheerily walked in with a wad of newspaper in hand, and proceeded back to the windows. The light was different…

That was it. The windows were clean!

To celebrate the soft autumn light, and to use up some seasonal apples, Apple Oat Muffins it was.

Apple and Oat Muffins

150g softened butter

3/4 cup raw sugar

1 tsp vanilla

1 cup of whole oats

1 1/2 cups self raising flour

2 beaten eggs

3 grated apples *

Cream butter and sugar together. Add the rest of the ingredients and mix well. Spoon mixture into lined muffin tray. Sprinkle with a little extra raw sugar. Bake at 190C for approximately 25 minutes.

*Apple season runs from January to May.

Biscuits are handy.

They can sidetrack a hungry belly that is calling out for food.

They can quieten a noisy Monkey.

You can eat them with one hand.

They can give a subtle little sugar hit, when the search is on.

You can balance one on your nose… if you felt so inclined.

And most importantly they are really easy to make.

Chocolate Vanilla Layer Biscuits, my current favourites.

Chocolate Vanilla Layer Biscuits

250g softened butter

220g (1 cup) caster sugar

4 tsp vanilla

2 eggs

450g (3 cups) plain flour

2 1/2 tbls cocoa

Beat softened butter and sugar together until creamy looking. Add vanilla and eggs, beat until mixed well. Add the flour and mix until a dough forms. Divide the mixture in half, and add the cocoa to one of the halves. Mix it in well. Roll out mixtures seperately, between two sheets of baking paper to about 1cm thickness with a rolling pin. Pop the dough sheets in to the fridge until hardens completely.

Once hardened, take the sheets out, remove baking paper and line the two doughs on top of each other. With a sharp knife, cut through the two layers, about an inch in width. Place strips on top of remaining dough and cut again, making sure it’s the same size. Once you have the four layers, cut strips into approximately 1 cm sized thickness. Lay them on a lined baking tray, and keep going with the rest of the dough.

Bake at 180C for approximately 25 minutes.

(This recipe makes quite a few biscuits… but it does depend on how much of the dough you eat raw.)

This week in my kitchen…

There is a whole lot of wonderful limes from my dad’s backyard tree. I’ve mentioned my love of the humble lime quite a few times, I never get tired of them. I’m thinking Coconut Lime Pie, Chicken Lime Pasta, Lime Cupcakes, Lime Marmalade… limes, limes, limes. (I’m trying not to think about caipiroska’s.)

Dark Almond chocolate for strength, patience and clarity. Works a treat… well for a little while anyway.

A new Italian cookbook. Won over at Not Quite Nigella, (which was a rather lovely surprise.)

Organic, spray free, local, seasonal fruit and vegetable box delivered to my kitchen door. Making life a little easier until I can get back to my farmers market lady.

Baking hotcross buns with a sleeping babe attached. It’s how all the bakers are doing it these days, (well ones with new babies anyway.)

Last year I did a few batches of hot cross buns. Trying to find the right recipe that worked for me. I still wanted to tweak it though, as didn’t feel it was quite ‘right’. This time I did part sourdough, part dried yeast… I’m getting there I think.

Hot Cross Buns

200g currants/raisins

200mls hot water

2 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp cardamom

1/2 tsp dark malt flour

1 tsp dried yeast

250g sourdough starter

100g sugar (2/3 cup, more if you like them sweeter)

250mls milk

100g softened butter

11/2-2 tsp salt

4 1/2 cups flour (675g)

Soak the fruit in the hot water, leave for a couple of hours/ over night.  Mix all ingredients together, except for the salt. Autolyse period 20-45 minutes. Add the salt and mix again, then turn out on to a lightly floured bench to knead until you get a lovely smooth ball of dough. Pop the dough back into the bowl, plastic bag over the top and leave to prove.  A couple of proves and folds over the next few hours. Then out onto lightly floured surface again and divide into 16 or so portions. Roll into balls, or simply divide to get a more square shape. Pop them on a lined baking tray, cover and leave for another prove.

Crosses

1/2 cup flour

1/4 cup sugar

1/4 water

Mix together and spoon into a piping bag just before they hit the oven.

Then bake at 210C for approximately 15-25 minutes, (until golden.)

Fetta Pumpkin sausage rolls

Fetta Pumpkin sausage rolls. They weren’t shifting out of my head until I made them. A few pumpkins came and went, fetta went into other dishes, and then finally the planets had aligned and voila… there was fetta and pumpkin in the fridge at the same time.

Time to get roasting.

There aren’t too many ingredients in here, so the key to getting it to taste great, is using great ingredients. A very sweet, seasonal pumpkin, some tasty Greek fetta, local whole garlic cloves and pastry.

It’s not often you’ll find packaged pastry in my recipes. I hadn’t had any in my freezer for a really long time. So long in fact that, the pastry and I just sort sat there, eyeing each other off for awhile. In the end though, pastry won. I wasn’t about to expand my culinary skills on making puff pastry just yet, (give me another 15 years perhaps) and a shorter crust pastry just wasn’t going to cut it for this one. So I slit the plastic, and funnily enough the world didn’t end.

Fetta Pumpkin Sausage Rolls

garlic

fetta

salt and pepper

olive oil

puff pastry

Cut your pumpkin into wedges and lay on a tray

add a couple of whole cloves of garlic

drizzle with olive oil

salt and pepper to taste

roast until soft and smelling delicious

All into a bowl, and mash with a fork, cool

add crumbled fetta, stir through.

Spoon mixture into middle of pastry sheet, and roll up

cut into sizes you want, bake on tray at 200C

until golden and smells delicious

the kitchen fairy

In the black of the night,

the kitchen fairy is up.

Sleep hides from her, skulking like a shadow, somewhere near by, but not close enough.

Tiptoed footsteps to the kitchen, careful to avoid the creaks in the floorboards.

outside is silence, the black of night is at its most silent.

The household sleeps on,

as the kitchen fairy begins to weigh and chop. Silent in her cutting and quartering.

her thoughts scamper from one to another, but even they eventually stop and pause, once the rhythm of cooking has taken over.

A match is struck, pots turned on.

Her breath held, while a pot lid slips from her grasp. She needn’t worry, the household slumbers on.

With the smells of plums and vanilla teasing the sleeping nostrils, she knows only good dreams can come of that.

Outside, the night continues on in black.

The kitchen fairy’s eyes grow weary,

sleep has stepped out of her shadows, beckoning to her once again.

The pots are turned off, her work now is done.

The slowly greying dawn will show lined jars of vivid plum jam, and cooling racks of sourdough bread,

time for the kitchen fairy to rest.

Plum Jam

2.3 kilos of plums

500mls water

2 kilos of sugar

juice of 1 lime

sunshine, lemons and a whispering curd

A rush of lemons.

Limoncello is now on the go, but it took three lots of lemons before I was happy with the quality that was to be used.

So what do I have? A whole lot of lemons. Lucky for me, I love lemons.

Limoncello, lemon cordial, and lemon curd have all been fiddled with in the kitchen this week. Limoncello will wait for another day as it’s not ready yet, but the cordial and curd? Cordial bottle nearly empty and there is now a large jar of curd whispering to me from the fridge. That’s right, she whispers. Sings to me from a closed door. Letting me know she is there and waiting.

Just a little taste as you walk on by, come on…you can do it. Leave the carrots, it’s me you really want. Where’s your teaspoon honey?…

It’s hard. It really is. Husky voiced, the lemon curd allures and entices you with her whispered sing song voice. Just a little teaspoon indeed.

It’s the Lauren Bacall of the fridge. Refined, sultry tones and probably wearing a beautifully cut Chanel type pants suit too. All that in a jar of old fashioned lemon curd…who knew?

Lemon Curd

1 cup of lemon juice

1 1/2 cups sugar

2 beaten eggs

1 tbls cornflour

In a pot add the juice and sugar. Bring to the boil, turn down a little and simmer for about 5 minutes. All sugar should be dissolved. In a bowl whisk your eggs and cornflour together. Slowly drizzle this mixture into the juice and sugar mixture, whisking quickly as you do. Keep at a simmer until the curd thickens.

Lemon Cordial

1 cup lemon juice

1 cup sugar

1 cup water

Equal parts strained lemon juice, sugar and water. Juice the lemons, strain the juice. In a pot add the sugar and water and bring to a rapid boil. Boil until it thickens slightly. (For me this took six minutes, depends on the amount you are using and also the pot though. Then add your lemon juice.

Store in a bottle and leave in the fridge. Serve with mineral water, ice and a couple of sprigs of mint, or perhaps a little vodka… or just good old tap water.

Wattalappam

Wattalapam is one of those dishes that has been lingering inside my head for the last…oh say eight years. I had dibble dabbled with a bit of Sri Lankan cooking over that time but the Wattalapam was one that I had avoided for various reasons. Wattalapam is basically like a spiced egg custard. Soft and subtle the added spices let this simple dessert do the talking.

Recently I had come across the book “Sri Lankan Flavours”, and skipping straight to the back (as that’s where the good stuff is to be found, and that’s the sort of gal I am.) There it was…Wattalapam.  No more encouragement needed, I had to give it a crack.

Now just as I had had the name Wattalapam rattling around in my head for the past eight years, I had also not eaten it for eight years. So my memory taste buds for this dish were probably not as a sharp as they could have been. I remembered I loved it, the aromatic spices made it, and also thought it was quite sweet. I wasn’t sure whether I wanted it that sweet this time around though. Even though there is a full cup of two different sugars in there, I think it could be upped if you like things on the sweeter side. I also thought it was at it’s tastiest once chilled, (rather than at room temperature.)

Wattalapam

* adapted from Sri Lankan Flavours- Channa Dassanayaka

600mls coconut milk

1/2 cup muscavado sugar

1/2 cup grated palm sugar

1 tsp cinnamon

1 tsp cardamom

1/2 tsp nutmeg

cloves optional

7 eggs beaten

Large handful of roughly chopped toasted cashews.

Over a medium heat, dissolve the two sugars in the coconut milk and then cool. In another bowl beat the eggs and add spices. Pour in cooled coconut milk, gently mix together and pour into baking dish, (approx 20cm).  Sprinkle with roughly chopped cashews. Then place dish within another pan of water. Water should come up to at least half. Bake at 160C for about an hour or until firm. Serve room temp or chilled.

“Mama these are the best biscuits in the whole world!”

Big contented sigh from me. I smile at Monkey Boy.

“Thanks little fella… you my dear, may have another”.

I’m easily satisfied with minimal effort on the kitchen front and happy taste sensations going on when you bite into a biscuit. Monkey Boy is easily happy when something just tastes good. No more words necessary.

Except when you forget the sugar, and you’ve just made a double batch of The Monkeys new favourite biscuits. Little Monkey took a bite and confidently handed the biscuit back. Monkey Boy said they tasted a bit old, and not really like last time. A visiting foodie friend wrinkled her nose up and handed the remaining biscuit to a quietly pouting baker. Baking ego quietly deflating.

What to do with rather a lot of sugarless coconut biscuits?

Yes, I could have eaten them, it didn’t bother me there was no sugar in them. But probably not the wisest idea, having 50 biscuits just for me.

What do? How to sugar them up?…Spoon jam in between them? Dunk them in chocolate? What about covering them in lime icing?

Hmmm, lime icing eh?…that should do the trick.

Much better. Eaten once again with gusto.

Chewy Coconut Biscuits

125g softened butter

1 tsp vanilla

1 cup desiccated coconut

1 cup plain flour

1/2 cup raw sugar

1/4 cup milk

Mix together and spoon into some cling wrap. Roll in to a log shape roll. Pop in to the fridge for a while, until the mixture firms up and roll again to get a smoother log shape. Cut into biscuit rounds with a serrated knife. Bake at 180 for about 15-20 minutes. Longer of you like them crunchy.

how to make butter and yogurt- Frugal Friday

I think every blogger who ever dabbles in food posts, has done a how- to- make- yogurt and/ or butter at one time or another. Just to add to the lovely collection- here’s my way.

How To Make Yogurt 

What you will need-

kettle, yogurt thermos, yogurt container, powdered milk, 2 heaped tablespoons old yogurt, water, measuring cup.

Time it takes- do it in the time it takes to boil the kettle.

Fill your kettle up and turn it on. Take 2 heaped spoonfuls of bought yogurt (like the end of the tub), add a little water to mix it, it’s now runny and set aside.

 Fill your yogurt container half full with water.

 Add one and a half cups of powdered milk. No need to shake it down and fit as much as you can, just roughly 1 1/2 cups. Mix it with a spoon and add your runny yogurt mixture. Mix again and fill the rest of the container up with water. Lid on, give it a good shake.

 Kettles boiled. Fill it up to the top of the plastic thingy inside. Place your yogurt container in with the lid on, add the thermos lid and leave it (don’t peak) for 8-12 hours. The longer you leave it the tartier it will taste. (I’ve forgotten it for 24 hours and it’s still fine.)

Once, about every six weeks I refresh the batch with a packet of the ready to go yogurt mix you can buy (which is just add water and shake.) I find it keeps the cultures stronger, and more likely to keep it at a thicker Greek style yogurt consistency, (which is what we all like.)

$20 for the yogurt maker, and each litre of yogurt I make, works out to be about $1.50 a batch. I then add any of our homemade seasonal jams to sweeten the yogurt. Dead easy. You are saving a whole bundle of money, no more plastic tubs and you don’t have the usual paragraph of ingredients that’s in a lot of yogurt today.

How To Make Butter

In a mixer, pour in a carton of cream. The best you can buy, (not thickened cream). Whip it….and keep whipping…

 Keep it whipping until it starts to look like this. The liquid will start to separate, which is then able to be drained off. Add a pinch of salt (to taste) and keep squeezing out that excess moisture using a spatula against the side of the bowl. You don’t want any of that moisture in there. Once it is all drained off it can be shaped into what ever shape you need.

Next time you see one of those fancy pancy butters imported from countries far far away, you can have a little chuckle at the thought of spending that much money on butter and then go home and make it yourself. Again, dead easy.

Now where’s the bread to go with it?…

Purple Carrot Bread

Now if I had a back yard garden I would have rows and rows of heirloom carrots growing. Not because I have an over whelming taste for carrots all the time, (although I do quite like them.) But because there are so many different colours you can grow. Orange, yellow, white, pink and for todays bread, the lovely purple.

I don’t often see them for sale, however my local farmers market has been stocking them the last few weeks so I’ve been stocking up. The Monkeys needed a little convincing they were indeed still carrots. A raised eyebrow and a sceptical look that only a 3 and 5 year old can give on being told, ‘of course they were carrots, taste them’.

So why should you eat an heirloom variety carrot?

* They taste fantastic. If you are comparing it to an insipid supermarket pale old orange carrot- well, there is no comparison.

* Encouraging genetic diversity. 

 * The purple carrots are full of antioxidants, and… they make things a pretty purple colour, (like this bread.)

Purple Carrot Bread

150g sourdough starter

150g purple carrots- steamed/ mashed

25g wheat bran

125mls water + purple carrot water from cooking

225g strong bakers flour

1 tsp salt

I did an over night prove in the fridge for this one. Baked at 240C with steam.

The result is a soft, chewy crumb similar to adding oats in a dough. The purple cooking water from the carrots adds to the intensity of the colour. The next lot of bread I made was just with the carrots, and no cooking water- resulting in a slightly less intense colour.

Illumination, disgrace and some Chocolate Honey biscuits

I can’t go in to my kitchen around two o’clock in the afternoon.

Far too scary.

At that time all I find is filth and disgrace. Twelve o’clock is fine, three thirty is fine too, but two o’clock…uh uhh.

You see, that’s when the afternoon light hits everything. Hit’s the bench tops, the stove top, the top of the fridge, the cupboard doors, it even fills up the tiny crack between the oven and the benches. So what does it show? It doesn’t show, it illuminates every crumb, finger print, and sloppage humanly possible.

At 9am, when the shadows are still discreet, I think I have a clean kitchen. I think I have a lovely clean kitchen. But come two o’clock and the thruth is revealed. The bare and honest truth.

If I have the unfortunate task of going in to said kitchen at this time, I usually do two things.

One, walk briskly out, muttering that’s disgusting, (obviously too disgusting to do anything about it.) Or two, I start cleaning.  Not enough to actually fix the problem, (because that clearly, would take hours and hours) but just enough to take away the time from what ever else I should have been doing.

So that’s why there can’t be any kitchen happenings at that time. Three thirty I can go back in there, and start hauling food around again.

(Which is well timed actually… as from three thirty onwards it’s the bathroom I have to avoid. Shocking illumination in there then.)

Chocolate Honey Biscuits

150g softened butter

150mls honey

150g melted chocolate

450g plain flour

1 tsp vanilla

Mix all together. put through a piping bag with a wide nozzel, (or simply roll them.) Bake at 180C for about 20 minutes.
