sweet potato leaves, it’s Frugal Friday

Sweet potato leaves have come up a few times in my Foodconnect box. At first (along with my red amaranth) I didn’t know what to do with it. A little playing though and another healthy leafy green vegetable to add to my growing list of all things good.

Now what to do with it?

It cooks up similarly to regular spinach, quickly and in a wilty kind of fashion. I used it here with potatoes, as I seem to have discovered there are good potatoes to be had in this world. Who knew!

In my trusty flat bottomed wok, (or use any old pot).

I added 2 good slurps of olive oil

an onion and diced garlic

pop in some already cooked chopped potatoes

give it a one two

add some sliced capsicum (peppers)

and the plucked whole sweet potato leaves

wilt it all on down for a minute or two

serve and drizzle with a little extra olive oil and a squeeze of lemon.

cooking with red amaranth- Frugal Friday

Red Amaranth is a delicious leafy vegetable that I had no idea what to do with. Lifting the lid of my Foodconnect box, sitting pretty up the top of the vegetables, I first wondered what it was and then what the devil I was going to do with it?

Plenty it seems. It’s used in Asian and South American cooking and can easily be used as a substitute for spinach or any other leafy greens.

In a flat bottomed wok add,

diced garlic

sliced onion

vegetable oil

sesame seed oil

Cook it up for a few minutes and then add

amaranth leaves (any other leafy green vegetable you might have, spinach, silver beet…)

a slurp of kecap manis (Indonesian sweet soy sauce)

a slurp of fish sauce

stick a lid on it and let it wilt down. Team it up with a bowl of basmati rice.

In the flat bottomed wok, crack an egg. Cook it through, and pop it on top of the rice and amaranth (leafy greens).

Back to the wok, add a small handful of local nuts (sesame, pecans, peanuts, whatever you have in stock…).

Once toasted add to the top.

 

 

 

Coconut Eggplant Curry- Frugal Friday

Coconut Eggplant Curry

In a pot add

1/2 cup of desiccated coconut, dry fry it until golden coloured and pop in to another bowl.

In your pot add

vegetable oil, diced garlic, onion, knob of ginger, dried coriander, cinnamon, cumin, tumeric.

Cook it up until it smells fantastic.

Now add a diced eggplant, a can of tomatoes, a can of coconut milk or cream, your dry fried coconut and 8 kaffir lime leaves.

Leave the lid on and let it simmer until the eggplant has cooked down. Salt to taste.

Serve it with rice, a squeeze of lime or flat bread.

This recipe was originally a beef curry from The Real Food Companion. I’ve morphed it quite a bit now though so it barely resembles its parentage. The key to the curry is the kaffir lime leaves. I’m lucky enough to get them fresh from my dads tree, which I then stock in the freezer so I always have them available, (they last for months.)  If you don’t have access to these wonderfully fragrant leaves, lime zest could be substituted, or perhaps some other citrus type leaf (?)

 

chevre, it’s a little bit goaty

I’m having a bit of a goaty moment. Not the whiskers on my chin kind, but goat cheese. Otherwise known as Chevre. I had tasted a few really great goat cheeses while I was in Tasmania and I wanted to continue the love when I got home. However, I didn’t want just any old goat cheese. I wanted to see if I could find a great local one. A quick search, and hey presto…I found Willowbrae.

Willowbrae is a family run goat farm, based at the foothills of the Hawkesbury Valley. They produce a number of products; from an unsalted 8 hour cream, the very popular fresh curd, marinated fetta, and mould ripened cheeses.  Talking with David (at Fox Studio Farmers’ Market) who runs the front and back end of the business, (as he described) he milks the goats twice a day, while his wife and daughter do the cheesemaking.

The more I try of goat cheeses, the more I like. The very popular fresh curd is subtle, creamy, and really soft on the palate. I find this kind of cheese is really versatile to play around with. Whether it’s teamed up with a savoury style dish or something sweeter.

So what does Chevre mean? It translates as goat in French, and is a generic term used for any goat cheeses. Musing on this I wondered if Italians called Chevre…well Chevre. Apparently not. Caprino is their term for goat cheese. Again derived from the word capra, meaning goat. I kind of liked the sounds of caprino. (But then as many people before me have said…everything sounds better in Italian.)

And what to do with it once you have the tasty little goat milk goodness in hand?

First up, I quickly made up some sourdough flat breads. Some of my dad’s garden cherry tomatoes, (the sweetest I’ve tasted in years.) Some of the creamy chevre, and a drizzle of The Little General’s olive oil.

Simple, I know where it all came from and damn tasty.

Spiced Indian Potatoes- Frugal Friday

Spiced Indian Potatoes

in a pan take

a good double slurp of vegetable oil

pop in

1 diced onion

2 tps cumin

2 tps coriander

2 tps tumeric

(if you have them 2 tps mustard seed, black or brown)

1 knob of diced fresh ginger

2 cloves of diced garlic

gently cook all these ingredients, letting the spices waft around the kitchen tantalizing your taste buds

Now pop in 4 roughly cubed medium sized potatoes, (you can partly cook them in the microwave beforehand just to make the process quicker. Only partly cooked though, you don’t want mush.) Stir it round, spices and onions coating the potatoes. Done when the potatoes are soft when pierced through.

Serve with a dollop of natural yoghurt, and a seasonal salad.

Easy dinner for Frugal Friday.

sourdough hoppers- Frugal Friday


For people reading you’re probably thinking one of two things…

1/ what is a hopper?

or

2/ THAT is not a hopper!

To answer Number 1/ A hopper is a cup shaped rice flour pancake basically. There a few different types, (string, egg, plain…) A staple from Sri Lanka quite often eaten for breakfast. Nothing tastier than dipping a freshly cooked hopper into some curry with attitude.

In answer to Number 2/ I don’t have a hopper pan, or anything remotely like it. Which is why my little hoppers look like plain old pancakes. If you had a deep enough wok, it would work just as well, (I have a flat bottomed one.) A traditional hopper pan is like a mini wok, and I am on the look out, yes I am…

This recipe is my take on the delicious hopper. So maybe not traditionally correct, but they still work.

I even got my mum’s vote of approval.

Sourdough Hoppers

1 cup sourdough starter

1 cup rice flour

1 tps salt

1 cup coconut milk/ or coconut cream

1/2 cup water

Add all ingredients together, and let sit for approximately 5 hours. Mixture is a like a pancake consistency, and should be bubbling away happily, when the time is up and they are ready to cook. Pop some of the mixture into the pan, if you are doing it in a rounded pan, let the edges get a little crispy and then popping a lid over the top to enable the steam to cook the inside. (The middle part will be thicker.) For egg hoppers, drop an egg into the middle, just before the lid goes on to steam.

Serve with a great curry, ripping off bits of the hopper and dunking it in.

Or, easy thing to have on Frugal Friday. Make the batch up in the morning, forget about it, then they will ready to cook up by dinner. Serve with some lightly cooked vegetables in some vegetable oil, garam masala, salt and pepper…and maybe a dollop of natural yoghurt on the side.

Potato and Rosemary Sourdough- Frugal Friday

There always seems to be one more loaf of bread to make. If I had the time, and sizeable pants. I would happily be making a different type of bread 7 days a week. Unfortunately (or fortunately) I don’t have that sort of time and my pants aren’t that stretchy. So if I have a bready idea I usually have to sit on it until we are out of bread again or a suitable meal comes up that we can accompany the bread with it.

Frugal Friday seemed like a good accompaniment. A simple salad and a wedge of bread.

Potato and Rosemary Sourdough

3 partially roasted roughly diced potatoes

3 rosemary stems

This little number was a normal white sourdough. The potatoes I had cooked half way through while I had one tray of biscuits in the oven and the second tray being free. Sourdough folded once before popping into the fridge, for an overnight ferment. During the fold,  2/3 of the cooked potato were folded through, leaving aside the remainder 1/3 for the next day. Also adding 1/2 the rosemary roughly chopped again. When it came to shaping time the next morning, rolling out  a short fat snake shape and loosely spiralling round. Lightly pressing in the remaining potato and roughly chopped fresh rosemary. Allow for another prove, approximately 1 hour, a good grind of sea salt all over the top of the dough. Then popping it into the oven at 250C, with steam. Bake until golden and hollow sounding when tapped on the bottom.

Morroccan Pumpkin with Cous Cous- Frugal Friday

a good slurp of olive oil

some finely diced garlic

sliced onion

knob of diced ginger

good sprinkle of cumin

another good sprinkle of coriander

make it a dash of cinnamon

pop in some cut up pumpkin

cook it all until the pumpkin is soft

now add some english spinach roughly chopped

season it

now wilt it down

slap it on a mound of cous cous

add a dollop of natural greek style yoghurt

be generous with some dried chilli* (or fresh)

and serve it up

Frugal Friday dinner made in a very short space of time

 

* chilli gives your dinner some attitude… I like my meal with attitude

 

Locavoring @ Fox Studios Farmers Market

A morning spent at Fox Studio’s Farmers Markets. My wallet a little leaner, my fridge a little fuller and my locavore selection criteria for the day, well and truly ticked.

Shopping list

Free Range Ham– Bought from Quattro Stelle, a small Italian family run business that runs out of  Kingsgrove . All products are made from Berkshire free range pork. The Berkshire pig is a heritage breed, ( like a heirloom tomato). This ham was sooo tasty. When you compare the taste of normal shop ham and then this one…. phew! No comparison. Thumbs up for this one for sure.

Fetta– Bought from Small Cow Farm. Located in Robertson, Southern Highlands. This company also runs cheesemaking courses- which sound fantastic. Taste wise, pretty good too. There are two fetta wheels in the little bucket, and priced at $14.50 for 400 grams. Monkey boy couldn’t get enough of this stuff.

1 kilo Sausages– Bought from Spring Hill Beef. Located in Burrawang, Southern Highlands. A company that farms grass fed Black Angus cattle.

1 large bag of assorted vegetables– Bought from family owned business located at Horsely Park in the Sydney basin.

Freshly ground coffee- 3 Amigos/Cafe East Timor, is my favourite coffee. At this stage they are only selling it at the markets, or you can call up and they will post you out some. Grown in East Timor, roasted in Sydney, and ground when you order it. 100% Arabica beans are used, organically and fairtrade produced. This is a lovely fresh coffee. I get a little antsy when our stock is running low, until we buy up again. I have tried a lot of different fairtrade coffees available and this one consistently still sticks out.

Frugal Friday #2

Its the end of the week again, and the fridge is looking a bit slim. I actually don’t mind when it comes to Frugal Friday, as it’s a bit more of a challenge to make something tasty out of not much.

I have a few different breads on my brain this week. Flicking through the lovely ‘Bourke Street Bakery ‘ cookbook there is much to be inspired by. Each recipe makes my heart swell. If there is any cookbook to lay under my pillow at night this would be the one I would choose.

I have been toying with the idea of making a sourdough starter, but have been holding back as it just seems so much work for something I’m not sure of what I am doing- lazy I know. Also lack of space in this little kitchen. Also lack of time, the monkeys they take a lot of it. Excuses, excuses I know. Who knows maybe next week I will change my mind.

I ever entered a bread phase. All I feel like doing is surrounding myself with beautifully risen doughs. There is something quite soul uplifting in kneading, proving, baking, and then eating a food that has been around for ever. I love the science of it and the fact that one tiny little change can completely change the end result.

I grew up with the smell of fresh bread in the air. My mother would make it every third day for the majority of my child hood. When I think of bread, I think of huge rising mounds of proving doughs, rising on the same table that I made pasta on 2 weeks ago. Filtered winter sun coming through the windows, and the kitchen already warm from loaves already baked. It’s such a feeling of comfort to eat bread still warm from the oven.

So I settled on a olive oil bread recipe in the cook book. A little different to any bread that I had made before, but timing it with a monkey nap I could actually put in the mindful attention that it needed and ‘voila‘. Some happy little bread rolls. Sure they didn’t look exactly like the picture- but thats a only a guide right?… and I reckon the next time they just might though.

So budget meal- yes indeed. Resourcefully using a few ingredients that are floating around the fridge with mutterings of”eat me, please eat me”.

Leek and Potato Soup– In a pot put a lovely dollop of olive oil, 2x sliced leeks, 4x potatoes, some vegetable stock, a little  seasoning- and whizz it up. Doesn’t get much easier than that.

Serve with some delicious warm bread.



Frugal Friday

Once more Friday rolls around and there is not much left in the fridge. Not quite so little as to go shopping but not quite so much as to have many options. What to do with some organic pumpkin, carrots, and some flaccid celery and still get the monkeys to eat it? Carrying on from the Indian theme from last Friday, I think it was going to have to be dhal. Add a little red lentils, vegetable stock, some garlic, a fistful of spices and I had myself a tasty, healthy, budget friendly, monkey friendly dinner. Add a little natural yoghurt on top, and some fresh naan bread and dinner was done for ‘Frugal Friday’.

Naan bread I had tried to make a number of years ago, with the end result being little hard round bricks. That was the last time I had attempted them. Naan bread being a firm favourite here and with an excellent little Indian take away around the corner to happily oblige us when the taste for naan over comes us.

But not today. I wanted to give it another crack…..

160ml warm water

1tsp dry yeast

1 tsp sugar

2 cups plain flour

1 tsp salt

2 tbls oil/or ghee

2 tbls yoghurt

Mix the water, yeast and sugar together in a bowl until dissolved. Leave in a warm place for 10 minutes. Add flour salt, half the oil and yoghurt. Mix to a soft dough then knead on floured  surface until smooth and elastic.

Place dough in a bowl with wet tea towel over the top in warm place for approx 1 1/2 hours or until doubled in size.

Knead dough on floured surface for 5 minutes, then divide into 6 portions. Roll out into rounds. I pulled one side to get the traditional ‘teardrop’ shape that you would get if cooking in a tandoor oven.

Cook in a very lightly oiled frying pan and pop the frying pan under the grill to get those distinctive brown puffy circles to finish it off. Brush naan with remaining ghee or butter.
