Super duper easy rustic style olive oil crackers, with a carrot top pesto, creme fraiche and a little salt on top.
I had a proud moment with this one, all local, easy, seasonal, very frugal and kid friendly. Yes, kid friendly was the ultimate winner for me. They were gulping them down!
They were also keen on getting their hands on this honey. Honey is always a favourite staple in this household and local harvested honey always seem to crop up just at the right time, (like when we are about to run out.)
This one will be drizzled on natural yogurt for an easy after dinner dessert, popped into smoothies, spread on toast with tahini and baked with an oaty combination in the oven. Every drop used.
So where did it all come from?
flour- Demeter Farm Mill
olive oil- Lisborne Grove, Hunter Valley
carrot tops- Rita’s Farm, Kemps Creek
lemons- Champion’s Organics, Mangrove Mountain
creme fraiche- Pepe Saya
Honey- Sth Coast NSW (bought when we were visiting the area)

Just how local is local? Well this depends entirely on you. Only you know how you and your family eat. Raise the bar just a little from what you already do. If making sure the majority of your meal includes solely food produced in your country, than make that your challenge. If you want to make it a little trickier, go for produced in the same state…trickier still within 160km.
My aim is to really know where my food is coming from for at least one meal a month, (where I will be posting here in the last week of the month).

Yum Brydie, I could eat that for dinner right now, seriously. Carrot top pesto is pure genius. I love that honey label, I have been known to buy things just because of the pretty label but in this case I am sure the honey is delicious too. Can it really almost be Friday again? x

Yum! I love the simplicity behind this, and I especially love how it’s simple without sacrificing flavor. Will have to save this one! I’ve gotten pretty into knowing where my food is coming from, so I love this challenge.

I find that the simplest meals are the best. Grab some homemade olive oil crackers and dip into some gorgeous carrot topped pesto. The stuff that dreams are made of. Love the honey as well. Note to self…buy honey from the bee keeper up the road (I keep forgetting to 😉 )

Looks great Brydie – I’ve got making crackers on my list! Did you use a pasta machine to roll them? I also love using vegetables ‘nose to tail’, or ‘tip to root’ perhaps 🙂 and I do like carrot top pesto, though my favourite is radish leaf. I actually go through the bunches looking for the one with the best leaves these days, with the radishes themselves almost an afterthought!

get out of town, radish leaves? I was looking at them the other day wondering whether you could and not being a massive fan of radishes I didn’t pursue the thought process. I’ll have to give that a crack.
No pasta machine used for the crackers, just hand rolled them.

they’re great, a little bit like rocket, I’ll post a recipe…and if you don’t like radishes raw, try them sautéed, they’re a whole new vegetable!

Yummy, yummy, and SO gourmet looking! Even better that all the ingredients are local! Too bad the carrots in our CSA share don’t come with the tops on.
