The good thing about having a blog is that you can see how you have changed over time. Looking back on your words, thoughts, photos and certainly for me, my recipes. Sometimes I feel those recipes need a little shake up.
Now come winter time, this dish (or a variation of it) often turns up on our dinner table. It’s easy, it’s seasonal, it’s super frugal and it deserved a better picture than this one from three years ago.
Cauliflower Curry
1/2 a large head of cauliflower
3 potatoes
3 sticks of celery
6 cloves of garlic
1 finely chopped onion
1 tsp coriander
1 tsp cumin
1 tsp turmeric
1 tsp curry powder ( a bit old school, but I like it)
400mls coconut milk
Dry fry the spices, onion, garlic (fresh chilli if you are feeling bold) and celery in a little vegetable oil. When they smell delicious, add the coconut milk. Let it simmer for a bit and then add your potatoes and cauliflower. Pop the lid of the pot on and cook it until they are as soft as you like.

We ate cauli curry for dinner just last night.
I feel so happy now that my girls love a good curry too finally.
And oh gosh how the old photos on my blog embarrass me.
It makes me feel a bit sick when someone tells me they are reading it from front to back.

I don’t know Kate. I just had a quick peek at your posts in 2009 and they are still just as cute, your girls modelling your creations…but my, they grew up!
In some ways I like having the old photos to see how far I’ve come and in other ways, eeek, shockers of photos I was putting up! (and sometimes I was trying so hard too.)

Thanks Brydie. This sounds delicious. Have you tried frying the onion etc in a bit of coconut oil? I love coconut oil for it’s health properties and I’m thinking it would be delicious in this. Enjoy your weekend. xxoo

I haven’t used coconut oil for awhile Julie. I have some languishing at the back of the cupboard so I should. I went through a phase of using it in everything and then it just kind of stopped… Do you use it for a lot of cooking?

Yum. I love this sort of curry… as you said, a little old school, a little new school, altogether delicious (I always remember eating curried egg sandwiches with curry powder as a child. So good. I feel a need to revisit it all over again now!). It’s interesting looking back on your post from a few years ago and comparing it to this one. I often feel a compulsion to update my photos on old posts but it’s nice to see how far we’ve come also. I like your old post Brydie! Hope that you have a wonderful weekend lovely xx

Curried egg sangas are the best Laura. Completely old school and I love them. I occasionally make for Mr Chocolate who isn’t so taken with them as he didn’t grow up with them. I still have to retrain his palate 🙂

Ladled over some delicious rice (seems we have every rice known to man suddenly available on our supermarket shelves these days?!) this would be a scrumptious comforting way to end a long hard winters day 🙂
