I wasn’t sure whether to continue my loving posts this year. However, a chaotic week came and went and all I had wanted to think about was the simple things I had been loving lately. A grounding, a connection and a reminder that not all parts of our life at the moment is a whirl wind of clocks, places to be and at times seeming chaos. There are simple moments entwined within the chaotic ones and they are the ones I want to most remember.

 Coconut Mango Ice Cream

In a blender, add two big bananas, one can of coconut milk, 1/3 cup of sugar and whizz it up. Pour it out into a dish and blend some fresh mango. Swirl that in too. Freeze it and either run a fork through every half an hour or so until you are ready to eat it or bring it out about 20 minutes before you want to eat it, running a fork through it, (the banana content should stop it freezing completely solid.)

  1. i’m glad you’ve decided to continue with these posts..they are very special brydie..i’m loving the rain we had last night..the first for more than two months..i lay awake just enjoying the sound and the smell of the rain on the warm earth wafting through my open window..pity about the mozzies! x

  2. Love your Loving posts Brydie. Do continue! They always seem to arrive at the right time; ie. just as I’m enjoying my morning coffee while the rest of the house is asleep. That avocado snack is perfect – there’s really nothing nicer than a perfectly ripe avo (and a pretty spoon)! Your swirly ice cream looks gorgeous – we’ve been experimenting with home-made ice creams too. Definitely the weather for it.

  4. I love the look of your mango/coconut ice cream. I find the first few weeks when the kids go back to school very frantic – there’s so much on including covering books, information nights, swimming carnivals and then the after school activities xx

  5. Brydie I love your posts and life wouldn’t be the same without them, so I’m so glad you’re continuing. That mango ice cream looks delish! Personally I am loving a feeling of reawakening, and a renewed zest for life after a hard six months of struggle, angst and doubt.

  6. I headed out just before sunrise this morning to walk Earl and as I walked the sun slowly stretched and woke up the land. We had a bit of rain, a few spots, overnight and everything started to wake up with the sun and smelled amazing…just watching the sun spread over the countryside was a simple and most breathtaking experience. I just stood there watching and feeling incredibly privilaged. Lovely, simple and soul satisfying on this wonderful summer Sunday 🙂 I LOVE the look of that icecream! I just saved it and off to pin before I lose it. Cheers for that 🙂

    At the moment I am loving the drop in temperatures at our place…cooking a roast dinner to celebrate actually being able to turn the oven on without over heating the whole house. Happy Sunday to you x
