Weekend get togethers with people that live near and so very far, far away. Time has stretched into years but conversation just flows…loving that.
Deep cups of chai on darkened mornings. Little ones sleep on, just me and my chai and quiet, so quiet…loving that.
Seeing pink faced, sweaty little boys laughing together. Everything is so hilarious… loving that.
Conversations that make you think, ponder, and dig deeper than you would normally venture…loving that.
Seeing her little upturned face to the rain. A joyous smile as rain drops splatter on those soft cheeks…loving that.
Tweaking favourite recipes to incorporate different flavours. Getting the thumbs up from Mr Chocolate, friends wanting the recipe and Monkey Boy declaring me to be the best mama in the world after eating it…loving that.

Spelt Brownie
200g chocolate (around about 50% cocoa)
100g butter
100g coconut oil
200g brown sugar
4 beaten eggs
2 tsp vanilla
200g wholemeal spelt flour
In a pot add the chocolate, butter, coconut oil, sugar and vanilla. Gently melt it down and cool it. Add remaining ingredients. Pop into a greased and lined tray.
Bake at 180C for approximately 25-30minutes, and then let it cool in the tin.
Finding joy in sharing good food with good friends. Loving that.
Your brownies look wonderful and chewy! I’ve never baked with spelt flour but I did just buy some coconut oil to try something new so I guess I will end up trying two somethings new. Loving that.

There are always so many things to be grateful for. Impressed at how you have three young children and yet you are able to find moments of peace – mine were always up at 4.45am and refused to sleep through the day. I found the days beyond long xx

YUMMO! We have a small producer of spelt in the state (Tassie) so might have to go for a sustainable bender drive and see what I can find :). Cheers for a delicious looking recipe and after prodding our chooks (no eggs for weeks!) I will head off on that road trip adventure and see what I can find 🙂

Brownies! and birthdays! and lovely pictures on your blog as always, you sound very mellow and calm with all that’s going on in your life. I do agree tea in bed is a wonderful start to the day. I am often on an emotional up and down these days, lots of stress, but I take pleasure in small things like I have returned to reading the paper in print and have treated myself to having it delivered and there is something very pleasing about hearing the rattle of the letterbox and seeing the paper there when I am still in my pjs. I haul it off to the kitchen and it is a good quiet time, reading it online is somehow not the same, the hum of the hard drive is not as physically pleasing as turning the pages and getting newsprint on your hands 🙂

It’s so very not the same is it. I like bending the paper back and forth, picking it up, putting it down, doodling on the side of it while I’m reading or talking to someone. Reading it on a screen is just not the same at all, no where near as relaxing!

Yay for spelt! I have a couple of wheat intolerant friends who have really got into this delicious grain… I’m yet to try it with brownies though. P.S my sourdough starter died I think… I didn’t feed it for a couple of days and then we had a terrible cold snap. It looks much less jolly (aka bubbly) now. Wah! I feel like a bad sourdough mother!
