My loved grandparents came to visit… and there were Double Ginger Bites.
The girls came to visit for a little cake and coffee by candle light… and there were Double Ginger Bites.
A little Christmas package was sent…and there were Double Ginger Bites.
I was hungry, and dinner seemed like a terribly long way off…and there were Double Ginger Bites.
Double Ginger Bites
125 grams softened butter
1 cup brown sugar
1 beaten egg
2 tsp vanilla
1/2 cup golden syrup
4 tsp ground ginger
1/2 tsp cinnamon
1/2 tps cardamom
3 cups plain flour
1 tsp bicarbonate soda
100g chopped uncrystalised ginger
Mix wet ingredients together. Mix dry ingredients together. Mix them all together. Knead it a little on a floured surface, mixing in the chopped ginger until you get a smooth dough. Let it rest in the fridge a bit until firm, then roll out dough 5mm thickness (or thicker if you prefer) and cut into rough squares and lay on lined baking tray.
Bake at 190C for approximately 15-20 minutes, or until light golden.
I really love ginger cookies- and these look Oh-so-gingery!

Oh I so needed these during my horrendous-morning-sickness-I-can-only-stand-things-with-lots-of-ginger phase. They also make me think of my Nana, who loved ginger so much, and who sadly died a few years ago. She would have adored these biscuits.

Barbara I think it’s a prerequisite for Nana’s to love ginger. I’m yet to meet one that doesn’t love ginger. (and grandparents are pretty special aren’t they.)

These could easily be made vegan too with any type of oil. Ginger is so healthy. Also I love the map wrapping too. I am stealing all these ideas from you as usual, you amazing brainiac maker.

CL I am so very lucky to have two grandmothers and one grandfather alive and super well. The three are in their eighties and I consider myself very, very fortunate.

I don’t find them that strong in gingery taste Hayley, but my ginger taste scale is fairly high ๐ You can always lower the powdered ginger and add more cardamom, nutmeg, cinnamon etc.

They look great Brydie! I absolutely love ginger, and it’s perfect for the chilly weather we’re having here too. Are these more crunchy or more chewy? I’m guessing chewy-ish. Can I be a pain and ask about cups… if you have a vague idea of how much one of your cups of flour weighs that would be so helpful. Don’t worry if not, I’ll probably use 135g for each cup, but if that were in the same ball park as you were thinking that would be a good confirmation!

Sorry Caroline, I’ve been making that recipe for so long I hadn’t actually noticed it didn’t have the grams.
So for us it’s 150g of flour for one cup or 250mls. For this recipe 450g of plain flour.
For the bites, they are crunchy, but if you wanted them chewy, I would say just cook a little less and maybe up the brown sugar and golden syrup a little.

Brydie, I made these as part of my Christmas cooking mailing this year – I loved how nice the dough was to work with, although I had to add about a tablespoon of milk to get it to come together (probably because of my flour’s moisture level) – I cut the dough into quarters and rolled it into a long ‘rope’- then pressed it into a long bar, which I cut into pieces – worked nicely.
One of your pics looked like you used candied ginger, and that’s what I had around – so I used that – it was delicious in them! I also subbed molasses for the golden syrup, which seemed to work well. We loved these, and decorated about half with buttercream and nuts. A very nice addition to our Christmas cookies. Thanks for posting it.
