The pumpkin had been sitting there, waiting patiently on the kitchen table for weeks.
Days went by, and still nothing. Evening meals came and went on by, still no pumpkin passed our lips. I was waiting for the right moment, the right time to cut in to that deep orange flesh. It had been grown and given with thought and love. I wanted to eat it in the same way.
The time was right, the knife was sharp, our bellies were hungry.
The pumpkin time had arrived.
Pumpkin Scones
25g softened butter
1/4 cup sugar
1 cup mashed pumpkin
1 beaten egg
grated rind of half a lemon
1/2 tsp nutmeg
pinch of salt
3 cups sifted s/r flour
Cream butter and sugar together. Whisk in all other ingredients except the flour. Fold in flour with a knife. Turn out on to a floured surface and lightly knead, just until the ingredients come together. Cut out with a floured upturned glass. Pop on to a baking tray and bake at 210C for about 20 minutes.

My dhal seems to change a little each time I make it, as I throw in what ever is going. As a loose guide though have a look here
and just switch the sweet potato to pumpkin. I also added some silverbeet to this one.

OK you might laugh but just down the road from you which is where I live, there is a pumpkin on my bench that was just like yours. Waiting to be eaten. I just cast a glance at it the other day and thought “Oh I had better not forget about you!” 😛

I love pumpkin scones but my mind has (foolishly) classified them as ‘hard’, by virtue of the initial pumpkin cooking step. Thus I never make them. I might need to work on that!

Definitely not hard Kari. I did a mass steaming of it all and then divided it up for the various dishes.

If I had ANY baking skills I’d be making pumpkin scones asap. Sadly, my baking skills are lacking so I make pumpkin soup instead.

Beauties! I might try that with a butternut squash (which is almost a pumpkin and the only one I really like) aren’t we funny about our squash tastes. I love the photos for this one too 🙂
