When Mr Chocolate came home with a whole stack of passionfruit, my mind was thinking oh what to make, what to make? As I am pretty much the only one in the household that likes passionfruit, I could do as I pleased with those tarty little treasures that originate from South America. Feeling the pull of the trusty biscuit, Passionfruit Shortbread it was.
I also made some for Monkey Boy’s pre-school fundraiser cake stall. They already had at least 20 people doing cupcakes, so I decided to stand alone with the biscuits. If nobody bought them, I knew Mr Chocolate would…its the kind man he is.
Passionfruit Shortbread
125 gms softened butter
1/2 cup sugar
Cream butter and sugar together, then add
pulp from 3 passionfruit
add flours
1 cup plain flour
2/3 cup s/r flour
Mix together and then place on a lightly floured board, roll with rolling pin until approximately 5mm thick and cut out. Cut out to desired shapes. Bake at 180C until pale golden.
Eat with enthusiasm, or sell them off at the next cake stall.
I’m into biscuits at the moment and I would definitely eat these with enthusiasm and buy them at your cake stall! Do you leave the seeds in?

I do leave the seeds in and they sit nicely in between your teeth for a little while longer than the biscuit did 🙂

I love shortbread.
Sometimes I have an absolute passion for shortbread.

Hey Brydie. Everyone is doing cupcakes these days. Just last week our kitchens were asked to donate for a really worthy cause something for their stalls, so we did a whole selection of biscuits & they went off…, so pre warm Mr Chocolate…, there may not be any leftovers.

Cupcakes are a bit old hat. Biscuits, it’s the new cupcakes…(plus they don’t get stale as quickly…and you can dunk them.)

gosh they look soooo good! I am not a huge biscuit eater but I think I might just have to make some of these this afternoon. II can almost taste the tang of the passionfruit with the sweet crumbly buttery biscuit…just from looking at those photos. There goes my plan to “be good” today…

I just love passionfruit, but they are so expensive. Every now and then I get given some from a friend…I have some in the freezer….might give your recipe a try.

How did I miss this. I have a passion for passionfruit since I ate my first one in Australia many years ago. Bringing home a bagful sounds like complete luxury – how come the rest of your family don’t like them – no comprendo? I bet those shortbread were divine.

Hi I have just made these and I couldn’t believe how quick and easy they were. I have them in the oven right now so I can’t wait to eat them cooked. I must admit I was eating a little of the cookie dough. I have a weakness for shortbread cookie dough which is tragic given the amount of butter. Thanks for this recipe it is great, plus I got to use up some of the passionfruit that I had talked about on my blog a week ago. Tanya.

I have a tin of passionfruit I’ve had in my cupboard calling out for me to make something with. I don’t feel like im in a cakey mood so looked for some bickies online. These look great – and I know my 3 boys love shortbreads so they wont last long. Thankyou for sharing such a great recipe 🙂

Made these today…a double batch which made 83 cookies of various shapes and thicknesses! I had to add 2 extra passionfruit as the dough would not stick together. I’m wondering if the best thing to do is measure the juice as I’ve since read that 3 passionfruit =1/2 cup. These are not as buttery and short as I had hoped for but will try them again, a single batch and measure the passionfruit juice. The subtle addition of the passionfruit is nice.
