summer salad- Frugal Friday

This is my standby summer salad at the moment. It’s finding itself teamed up with a whole heap of dishes, as you can make a big batch of it and it’s not going to go soggy when left in the fridge for a few days.

Summer salad

Chopped up raw kale leaves, (don’t worry about the stalks, too chewy)

Steamed and diced carrots

Steamed corn cut off the cob

Sliced capsicum (peppers)

Pecans

If you have any other seasonal goodies hanging around, pop them in too.

Dress with your favourite dressing.

    Oh this looks delicious! We love growing kale-oodles of it but haven’t had it in a salad yet. Are you still hanging in there? Can’t be too much longer now. All the very best if I don’t get a chance to say it again before the new arrival :-D

      Kale is such a wonderful superfood. I wish I could grow the stuff… maybe I need to move to Tasmania to do that.

    Looks fresh and vibrant….I’d love to add an orange honey dressing to this salad. I love those pecans in there! Yum!

    wow that looks like the kind of salad a nutritionist would use as a perfect example of a good colourful meal.

    I would love to hear some of your salad dressing suggestions sometime…you know, when you have spare time, maybe in a few years! x

      Tomato sauce?…
      ok, maybe not. Olive oil, balsamic, lemon juice, mayo, dijon mustard- not all together, but there is usually a concoction of several of them floating around my salads. (Although I did like Anna’s suggestion (above) of a honey orange dressing.)

    I have recently discovered the wonderment that is kale. Such a versatile and tasty vegetable! You salad looks fab and is Food Patrol allowable with a little tweak. Bonus points to you! X

      It’s good stuff isn’t it! I’ve used it in lots of cooking, still haven’t summoned the courage for a green smoothie though…

    Love a summer salad. I have salad envy right now. The L.F. is a vegies man and gets rather disappointed when I dish up a salad :(

      The soggiest summer I’ve known Joanna. Rain, rain, rain… not that I’m complaining, it beats 35C plus days, that’s for sure.

      Pecans quite often find there way into a lot of my meals. Not too expensive and I can get locally grown ones relatively easy. Plus they taste good!

    this is the sort of kale salad I could quite enjoy – need to look out for more kale (is it black kale you use?) – I love the sound of any salad that doesn’t go soggy in the fridge
